drained and rinsed

3 cups low-sodium chicken broth

½ cup frozen or canned corn (optional)

Salt and freshly ground black pepper to taste

4 ounces (115 g) cream cheese

softened

½ cup sour cream or plain Greek yogurt

½ cup shredded Monterey Jack or white cheddar cheese

Fresh cilantro

chopped (optional)

Sliced jalapeños (optional)

Lime wedges (optional)

Crushed tortilla chips (optional)

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the diced green chiles, cumin, chili powder, smoked paprika, oregano, and cayenne pepper (if using) to the pot. Stir well to combine.
  • Incorporate the shredded chicken, white beans, chicken broth, and corn (if using) into the pot. Season with salt and pepper to taste.
  • Bring the chili to a simmer, reduce heat, and let it cook for 20 minutes, stirring occasionally.
  • In a separate bowl, combine the softened cream cheese, sour cream or Greek yogurt, and shredded cheese. Add this mixture to the chili and stir until well combined and creamy.
  • Cook for an additional 5 minutes until heated through. Adjust seasoning if necessary.
  • Serve hot, garnished with cilantro, jalapeños, lime wedges, crushed tortilla chips, and extra shredded cheese as desired.

Notes
