4 cups powdered sugar

1/4 cup heavy cream

1 teaspoon vanilla extract

1/2 cup white chocolate

melted and cooled

Instructions

  • Preheat the oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and flouring them.
  • In a bowl, sift together the cake flour, baking powder, and salt.
  • In a large bowl, cream the butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Combine the flour mixture with the butter mixture in three additions, alternating with the milk and sour cream, mixing until just combined.
  • Fold in the melted white chocolate and fresh raspberries gently into the batter.
  • Divide the batter evenly among the prepared pans and smooth the tops.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  • For the frosting, beat the butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla extract until the desired consistency is reached.
  • Fold in the melted white chocolate until well combined.
  • Once the cakes are cooled, layer them with frosting in between and cover the top and sides with remaining frosting.
  • Garnish with fresh raspberries before serving.

Notes

Make sure all ingredients are at room temperature for the best results. You can also add extra raspberry puree in between layers for more fruity flavor.
