Ingredients
4 large eggs
2 ripe avocados
1/2 red onion finely chopped
1 cup cherry tomatoes halved
1/4 cup fresh cilantro chopped
2 tablespoons lime juice
1 tablespoon olive oil
Salt and pepper to taste
Optional: A pinch of red pepper flakes for added spice
Instructions
- In a medium pot, bring water to a boil and carefully add the eggs. Boil for about 10-12 minutes for hard-boiled eggs, then transfer them to an ice bath to cool.
- Once cooled, peel the eggs and chop them into bite-sized pieces.
- In a large bowl, combine the chopped eggs, diced avocados, chopped red onion, halved cherry tomatoes, and chopped cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, salt, pepper, and red pepper flakes if using.
- Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocados.
