Ingredients

4 large eggs

2 ripe avocados

1/2 red onion finely chopped

1 cup cherry tomatoes halved

1/4 cup fresh cilantro chopped

2 tablespoons lime juice

1 tablespoon olive oil

Salt and pepper to taste

Optional: A pinch of red pepper flakes for added spice


Instructions

  • In a medium pot, bring water to a boil and carefully add the eggs. Boil for about 10-12 minutes for hard-boiled eggs, then transfer them to an ice bath to cool.
  • Once cooled, peel the eggs and chop them into bite-sized pieces.
  • In a large bowl, combine the chopped eggs, diced avocados, chopped red onion, halved cherry tomatoes, and chopped cilantro.
  • In a separate small bowl, whisk together the lime juice, olive oil, salt, pepper, and red pepper flakes if using.
  • Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocados.
  • Serve immediately or refrigerate for up to an hour before serving for a chilled salad.

Notes

This salad is best served fresh, but can be refrigerated for a short time. If you prefer a creamier texture, you can mash one of the avocados slightly before mixing.
