1/2 cup zero-calorie sweetener (erythritol

2 large eggs (room temperature)

1/4 cup melted coconut oil or butter

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp salt

Optional: 1/4 cup sugar-free chocolate chips or chopped nuts


Instructions

  • Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  • In a large bowl, mix the Greek yogurt, melted coconut oil (or butter), and zero-calorie sweetener until smooth.
  • Add the eggs one at a time, whisking until well combined.
  • Sift in the cocoa powder, almond flour, baking powder, and salt, mixing until just combined.
  • If using, fold in the sugar-free chocolate chips or nuts.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan before cutting into squares and serving.

Notes

For best results, use full-fat Greek yogurt for a creamier texture. You can adjust the sweetness according to your taste with different sweeteners.
