Ingredients
1 cup Greek yogurt (full-fat for best texture)
3/4 cup unsweetened cocoa powder (Dutch-processed if you like deeper chocolate)
1/2 cup almond flour (or 3/4 cup all-purpose flour for non-gluten-free)
1/2 cup zero-calorie sweetener (erythritol
allulose
or monk fruit blend — see notes)
2 large eggs (room temperature)
1/4 cup melted coconut oil or butter
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
Optional: 1/4 cup sugar-free chocolate chips or chopped nuts
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a large bowl, mix the Greek yogurt, melted coconut oil (or butter), and zero-calorie sweetener until smooth.
- Add the eggs one at a time, whisking until well combined.
- Sift in the cocoa powder, almond flour, baking powder, and salt, mixing until just combined.
- If using, fold in the sugar-free chocolate chips or nuts.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan before cutting into squares and serving.
Notes
For best results, use full-fat Greek yogurt for a creamier texture. You can adjust the sweetness according to your taste with different sweeteners.
