- 1/2 cup pumpkin puree
- 1/4 cup cold heavy cream
- 1 large egg
- 2 tablespoons granulated sugar
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- Add the cold butter cubes to the flour mixture and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
- Stir in the pumpkin puree and heavy cream until just combined.
- Turn the dough onto a lightly floured surface and knead gently until it comes together. Pat it into a circle about 1 inch thick.
- Cut the dough into wedges and place them on the prepared baking sheet.
- Brush the tops with the beaten egg and sprinkle with additional sugar.
- Bake for 15-20 minutes or until golden brown. Let cool slightly before serving.
