This 30 Minute Creamy Tomato Gnocchi with Burrata is a quick and indulgent dish that combines tender gnocchi with a luscious tomato cream sauce, topped with creamy burrata and fresh basil.

- 1/4 cup extra-virgin olive oil
- 6 to 8 garlic cloves
- peeled and lightly crushed
- 2 pints cherry tomatoes
- 1/2 tsp. red pepper flakes (optional)
- 1 tsp. kosher salt
- 1/2 tsp. freshly cracked black pepper
- 1/2 cup heavy cream
- 2 (16-oz. packages) potato gnocchi (I like DeLallo brand)
- 2 (4-oz.) balls fresh burrata cheese
- 1/2 cup fresh basil leaves
- sliced or torn
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, about 1-2 minutes.
- Add the cherry tomatoes, red pepper flakes, salt, and black pepper to the skillet. Cook until the tomatoes burst and soften, about 5-7 minutes.
- Stir in the heavy cream and let it simmer for another 3-5 minutes until the sauce thickens slightly.
- In a separate pot, cook the gnocchi according to the package instructions until they float to the surface. Drain and add to the tomato sauce.
- Gently toss the gnocchi in the sauce until well-coated. Remove from heat.
- Serve the gnocchi topped with torn burrata and fresh basil leaves.
Notes
For added flavor, consider drizzling a bit more olive oil over the finished dish. This recipe is best enjoyed fresh but can be stored in an airtight container for 2-3 days.
