Ingredients

  • 1 (8 oz) block cream cheese
  • softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups cold heavy whipping cream
  • 12 oz strawberries
  • hulled and sliced
  • 6 oz blueberries
  • 8 oz pound cake or ladyfingers
  • cubed
  • Optional: strawberry jam or berry compote for an extra fruity layer
  • Extra berries for garnish
  • Fresh mint leaves (optional)

Instructions

  1. In a large mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth.
  2. In a separate bowl, whip the cold heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until well combined.
  3. In serving cups, layer the cubed pound cake or ladyfingers on the bottom, followed by a layer of whipped vanilla cream, then add a layer of strawberries and blueberries.
  4. Repeat the layers until the cups are filled, finishing with a layer of whipped cream on top.
  5. Top with extra berries and fresh mint leaves if desired. Serve chilled and enjoy!
