- 2 medium sized zucchini sliced
- salt and pepper
- 1 cup flour
- 3 large eggs
- 1 cup Panko
- 1/4 cup parmesan cheese
- 1 Tablespoon Italian seasoning
Instructions
- Preheat your air fryer to 400°F (200°C).
- Slice the zucchini into thin rounds and season with salt and pepper.
- Set up a breading station with 3 bowls: flour in one, beaten eggs in the second, and a mixture of Panko, parmesan cheese, and Italian seasoning in the third.
- Coat each zucchini slice first in flour, then dip in the egg wash, and lastly coat with the Panko mixture.
- Place the breaded zucchini chips in a single layer in the air fryer basket.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.
Notes
For extra flavor, you can add garlic powder or other spices to the Panko mixture. Make sure not to overlap the zucchini chips in the air fryer for maximum crispiness.
