Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, toss the eggplant rounds with kosher salt and let them sit for about 10 minutes to draw out moisture.
- Rinse the eggplant rounds and pat them dry with a paper towel.
- In a bowl, combine the eggplant, olive oil, garlic powder, smoked paprika, and black pepper, mixing until the eggplant is evenly coated.
- Arrange the eggplant rounds in a single layer in the air fryer basket.
- Cook for about 15-20 minutes, flipping halfway through, until golden and crispy.
- If desired, sprinkle with grated parmesan cheese and lemon zest before serving.
