  • 1/2 cup honey
  • 1/4 cup mayonnaise
  • 1 teaspoon lemon juice
  • 4 boneless skinless chicken breasts
  • 2 tablespoons butter
  • 8 ounces white button mushrooms
  • 1 tablespoon olive oil
  • 4 slices bacon
  • 2 cups Colby Jack cheese
  • 2 tablespoons fresh parsley
  • Salt and freshly ground black pepper

Instructions

  1. In a bowl, whisk together Dijon mustard, honey, mayonnaise, and lemon juice to create the marinade.
  2. Add the chicken breasts to the marinade, cover, and refrigerate for at least 1 hour or overnight for best flavor.
  3. Preheat your oven to 350°F (175°C).
