- 1/2 cup Dijon mustard
- 1/2 cup honey
- 1/4 cup mayonnaise
- 1 teaspoon lemon juice
- 4 boneless skinless chicken breasts
- 2 tablespoons butter
- 8 ounces white button mushrooms
- 1 tablespoon olive oil
- 4 slices bacon
- 2 cups Colby Jack cheese
- 2 tablespoons fresh parsley
- Salt and freshly ground black pepper
Instructions
- In a bowl, whisk together Dijon mustard, honey, mayonnaise, and lemon juice to create the marinade.
- Add the chicken breasts to the marinade, cover, and refrigerate for at least 1 hour or overnight for best flavor.
- Preheat your oven to 350°F (175°C).
- In a skillet, melt butter over medium heat and sauté the sliced mushrooms until they are soft. Sprinkle with salt and pepper to taste.
- Remove the chicken from the marinade and discard the leftover marinade.
