Instructions
- In a mixing bowl, combine the whole wheat pastry flour, all-purpose flour, cinnamon, nutmeg, granulated sugar, and baking powder.
- In another bowl, whisk together the eggs and milk.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- Fold in the chopped or grated apples until evenly distributed.
- Heat the canola oil in a deep frying pan over medium heat, ensuring it reaches a temperature of about 350°F.
- Drop spoonfuls of the batter into the hot oil, frying until golden brown on each side, about 3-4 minutes per side.
- Remove the fritters and set them on a paper towel to drain excess oil.
- For the glaze, mix powdered sugar, vanilla, and milk in a bowl until you achieve your desired consistency.
- Drizzle the glaze over warm fritters before serving.
