Description

This Apple Arugula Salad combines the crisp sweetness of apples with the peppery flavor of baby arugula, topped with roasted pecans and creamy goat cheese for a refreshing and flavorful dish.


Ingredients

  • Fuji apples
  • Gala apples
  • Honeycrisp apples
  • baby arugula
  • red onion
  • dried figs
  • goat cheese crumbles
  • raw pecan halves
  • pure maple syrup

Instructions

  1. Begin by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the pecan halves with maple syrup until they are well-coated.
  3. Spread the pecans out on the prepared baking sheet and roast in the preheated oven for 10-12 minutes until golden, stirring halfway through.
  4. While the pecans are roasting, slice the apples and red onion thinly.
  5. In a large salad bowl, combine the baby arugula, sliced apples, thinly sliced red onion, and dried figs.
  6. Once the pecans are done, allow them to cool slightly before adding them to the salad.
  7. Top the salad with goat cheese crumbles and gently toss everything together.
  8. Drizzle with additional maple syrup if desired and serve immediately.
