Description

This refreshing Apple Arugula Salad combines crispy apples, peppery arugula, and savory goat cheese, topped with sweet maple pecans for a delightful crunch.


Ingredients

  • 3 apples
  • sliced very thin
  • 5 oz arugula
  • 1/4 cup red onion
  • sliced thin
  • 1/2 cup figs
  • chopped
  • 1/2 cup goat cheese crumbles
  • 1 cup pecan halves
  • 2 Tbsp maple syrup
  • pinch of sea salt
  • 1/2 cup olive oil
  • 2 tsp maple syrup
  • 1 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove
  • minced
  • 3 Tbsp balsamic vinegar
  • 1/41/2 tsp sea salt
  • Or to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet.
  2. In a bowl, toss pecan halves with maple syrup and a pinch of sea salt. Spread the pecans on the baking sheet and bake for 10-12 minutes, or until toasted.
  3. In a large bowl, combine sliced apples, arugula, red onion, figs, and goat cheese crumbles.
  4. In a smaller bowl, whisk together olive oil, maple syrup, lemon juice, Dijon mustard, pepper, minced garlic, balsamic vinegar, and sea salt to make the dressing.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Top the salad with the maple pecans before serving.

Notes

Feel free to substitute different cheeses or add nuts of your preference. Adjust the seasoning in the dressing as per your taste.
