Description

Indulge in the delightful flavors of fall with this creamy Apple Cider Cheesecake, combining the rich taste of cheesecake with the warmth of spiced apple cider for a perfect dessert.

Ingredients

Scale
  • 270g or 2 packed cups digestive cookies or graham crackers
  • 85g or 6 tablespoons butter (melted)
  • ¼ teaspoon salt
  • 2 tablespoons powdered sugar
  • 720g or 3 cups fresh apple cider
  • mulling spices
  • 3 full fat cream cheese bricks (227g each) softened and at room temperature
  • 200g or 1 cup brown sugar
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 240g or 1 cup sour cream
  • ⅓ cup reduced apple cider
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 2 tablespoons all purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine the digestive cookies or graham crackers with melted butter, salt, and powdered sugar, mixing until well combined. Press the mixture firmly into the bottom of a springform pan to create the crust.
  3. In a saucepan, heat the apple cider with mulling spices until fragrant, then simmer to reduce it to about 1/3 cup. Let it cool.
  4. In a large mixing bowl, beat the softened cream cheese with brown sugar and salt until creamy and smooth. Add vanilla extract, sour cream, reduced apple cider, and cinnamon, mixing until well incorporated.
  5. Add the eggs one at a time, mixing on low speed after each addition until just combined. Then, gently fold in the flour.
  6. Pour the filling over the prepared crust and smooth the top. Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.
  7. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. This helps prevent cracking.
  8. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.

Notes

For best results, ensure all ingredients are at room temperature before mixing. You can garnish the cheesecake with whipped cream and caramel sauce for added flavor.
