- 3/4 cup (165 g) light brown sugar

- 1/4 cup (50 g) granulated white sugar
- 2 egg yolks
- at room temperature
- 2 tsp vanilla
- 2 tbsp (30 ml) apple cider reduction
- 1/4 cup (50 g) granulated white sugar
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- pinch ground allspice
- 1–2 tbsp (14–28 g) salted butter
- melted
Instructions
- In a saucepan, reduce apple cider over medium heat until it thickens and measures about 1/2 cup, then set aside to cool.
- In a mixing bowl, beat the cold cream cheese, granulated sugar, and vanilla until smooth, then refrigerate.
- In another bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt.
- In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar until fluffy.
- Add egg yolks and vanilla to the butter mixture and mix well, then incorporate the apple cider reduction.
- Gradually add the dry ingredients to the wet ingredients, and mix until just combined.
- Chill the dough for about 30 minutes, then preheat the oven to 350°F (175°C).
- Form the cookie dough into balls, create an indentation in the center, and fill it with the cheesecake mixture.
- Bake for 12-15 minutes or until the edges are light golden brown.
- While cookies are cooling, mix the spiced sugar ingredients and brush melted butter onto the warm cookies before sprinkling with spiced sugar.
Notes
Make sure the cream cheese is cold to achieve the perfect filling texture. Let the cookies cool completely before storing them in an airtight container.
