- 3 cups (300 grams) old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 and 1/2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1 cup (240 ml) milk (almond or regular dairy milk work well)
- 2 large eggs
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 medium Granny Smith apple
- peeled
- cored
- and chopped (about 1 cup)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped apple.
- Spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 25-30 minutes or until the tops are golden and a toothpick comes out clean.
- Allow to cool for a few minutes before removing from the tin. Enjoy warm or let cool completely and store for later!
Notes
These baked oatmeal cups can be stored in the refrigerator for up to a week and are great for meal prep. You can also freeze them for longer storage.
