Deliciously moist and fluffy Apple Cinnamon Muffins filled with fresh apples and topped with a crumbly streusel, perfect for breakfast or a snack.

- 1½ cups all-purpose flour
- ½ cup granulated white sugar
- ½ cup packed brown sugar
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- ½ teaspoon salt
- ⅓ cup vegetable or canola oil
- 1 large egg
- ⅓ cup milk
- 1–2 large apples
- peeled
- cored
- and chopped into small pieces
- ¼ cup granulated white sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons cold butter
- cut into small cubes
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, combine the vegetable oil, egg, and milk. Mix well and then add to the dry ingredients, stirring until just combined.
- Gently fold in the chopped apples.
- Divide the muffin batter evenly into the prepared muffin tin.
- For the streusel, combine the sugar, flour, butter, and cinnamon in a small bowl. Mix together until crumbly, then sprinkle over the muffin batter.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Feel free to mix in some walnuts or pecans for added crunch. Store muffins in an airtight container for up to 3 days.
