- 12 oz. brick-style cream cheese room temperature
- 1/2 cup granulated sugar
- 3 Tablespoons all-purpose flour
- 1 teaspoon vanilla
- 1 egg
- 3/4 cup powdered sugar
- 2 Tablespoons milk or cream
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix together the ingredients for the crisp topping until crumbly and set aside.
- Combine diced apples, granulated sugar, and cinnamon in a bowl and toss to coat.
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat butter and sugar until light and fluffy, then add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract and milk until combined.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Spoon batter into muffin tins, filling each about halfway.
- Add a layer of apple filling on top of the batter, followed by a dollop of cheesecake filling made by mixing cream cheese, sugar, flour, vanilla, and egg until smooth.
- Top each muffin with the crisp topping and sprinkle with cinnamon-sugar mix.
