Description
This Apple Crumble Chia Pudding combines creamy chia pudding with sweet stewed apples and a crunchy crumble, creating a delightful and nutritious dessert.

- 1/3 cup unsweetened plain plant-based yogurt
- 3 tbsp apple butter
- 1 medjool date
- 1 tsp yellow miso paste

- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp kosher salt
- or more to taste
- 3/4 cup soy milk
- 1/3 cup chia seeds
- 3 tbsp gluten-free rolled oats
- 3 tbsp walnuts or pecans
- 2 medjool dates
- 2 apples
- diced or thinly sliced
- 2 tsp maple syrup
- 1/4 tsp cinnamon
Instructions
- In a mixing bowl, combine the plant-based yogurt, apple butter, medjool date, yellow miso paste (if using), vanilla extract, cinnamon, cardamom, kosher salt, and soy milk. Whisk until smooth and well combined.
- Add in the chia seeds and stir to combine. Cover and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
- To prepare the stewed apples, place the diced apples in a saucepan over medium heat. Add the maple syrup and cinnamon. Cook, stirring occasionally, until the apples are tender, about 10-15 minutes.
- For the crumble, in a small mixing bowl, combine the rolled oats, chopped walnuts or pecans, and chopped medjool dates. Mix until crumbly.
- To serve, layer chia pudding in bowls, top with stewed apples, and sprinkle the crumble over the top. Enjoy!
Notes
For added sweetness, adjust the number of medjool dates in the pudding and crumble to taste. You can also add a dollop of yogurt on top when serving for extra creaminess.
