Ingredients

  • 2 cups non-dairy milk
  • 4 tablespoons apple sauce
  • 12 tablespoons maple syrup
  • 11 ½ teaspoon apple pie spice
  • ¼ cup yogurt
  • 1 large apple
  • 2 teaspoon coconut oil
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon

Instructions

  1. In a bowl, whisk together chia seeds, non-dairy milk, apple sauce, 1 tablespoon maple syrup, and apple pie spice. Stir until well combined.
  2. Cover the bowl and refrigerate for at least 4 hours, or overnight, until the mixture thickens into a pudding.
  3. When ready to serve, heat coconut oil in a skillet over medium heat. Add chopped apple, 1 tablespoon maple syrup, and cinnamon; sauté until apples are tender and caramelized, about 5-7 minutes.
  4. Spoon the chia pudding into bowls and top with warm spiced apples and a dollop of yogurt.

Notes

Feel free to adjust the sweetness by adding more or less maple syrup. For added texture, try adding nuts or granola on top.
