- ½ cup chia seeds
- 2 cups non-dairy milk
- 4 tablespoons apple sauce
- 1–2 tablespoons maple syrup
- 1 – 1 ½ teaspoon apple pie spice
- ¼ cup yogurt
- 1 large apple
- 2 teaspoon coconut oil
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
Instructions
- In a bowl, whisk together chia seeds, non-dairy milk, apple sauce, 1 tablespoon maple syrup, and apple pie spice. Stir until well combined.
- Cover the bowl and refrigerate for at least 4 hours, or overnight, until the mixture thickens into a pudding.
- When ready to serve, heat coconut oil in a skillet over medium heat. Add chopped apple, 1 tablespoon maple syrup, and cinnamon; sauté until apples are tender and caramelized, about 5-7 minutes.
- Spoon the chia pudding into bowls and top with warm spiced apples and a dollop of yogurt.
Notes
Feel free to adjust the sweetness by adding more or less maple syrup. For added texture, try adding nuts or granola on top.
