- ¼ cup granulated sugar
- ¼ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- ¼ tsp salt
- 2 Granny Smith apples peeled and finely diced
- ¼ cup brown sugar for filling
- 1 tsp cinnamon
- ¼ tsp nutmeg
- Pinch of allspice
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour, granulated sugar, brown sugar, and salt.
- Cut in the cold cubed butter until the mixture resembles coarse crumbs.
- Add the egg and vanilla extract, mixing until a dough forms.
- In a separate bowl, mix the diced apples, brown sugar for filling, cinnamon, nutmeg, and allspice.
- Roll out the dough and cut it into circles. Place a spoonful of the apple mixture on each circle.
- Fold the dough over the filling and seal the edges.
- Place the cookies on a baking sheet and bake for 25-30 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
