Description

These Apple Pie Snickerdoodles combine the warm, comforting flavors of apple pie with the soft, cinnamon-sugar goodness of snickerdoodle cookies.


Ingredients

  • 1 ½ cups (300 g) granulated sugar
  • 2 large eggs
  • room temperature
  • 1 tablespoon vanilla extract
  • 2 ¾ cups (352 g) all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 3 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and 1 ½ cups granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in ¾ cup of the finely chopped apple pie filling to the cookie dough.
  7. In a small bowl, mix 3 tablespoons of sugar with 1 tablespoon of cinnamon to create cinnamon sugar.
  8. Scoop tablespoon-sized portions of dough, roll them into balls, and roll each ball in the cinnamon sugar mixture.
  9. Place the dough balls on the prepared baking sheet, leaving space between each.
  10. Bake for 10-12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a twist, you can add chopped nuts or raisins to the cookie dough. Store cookies in an airtight container for freshness.
