- 2 teaspoons ground cinnamon

- 1/2 cup white sugar
- 1/4 cup brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 cup unsweetened applesauce
- 1/3 cup unsalted butter melted for topping
- 1/4 cup white sugar for topping
- 1 teaspoon ground cinnamon for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
- In another bowl, mix the melted butter, white sugar, brown sugar, and vanilla extract until well combined.
- Add the eggs one at a time, mixing well after each addition, then stir in the applesauce.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- In a small bowl, mix the melted butter, sugar, and cinnamon for the topping, and sprinkle it over the batter.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Notes
For added flavor, consider mixing in chopped nuts or raisins.
