- ¼ cup water
- ¼ cup freshly squeezed lemon juice
- 1.8 kg granulated sugar
Instructions
- Wash and chop the apricots, removing any pits, and place them in a large pot.
- Add the water and lemon juice to the pot, and bring to a simmer over medium heat.
- Once the apricots have softened, mash them slightly with a potato masher or fork.
- Stir in the granulated sugar until fully dissolved, and bring the mixture to a boil.
- Cook at a rolling boil for about 20-30 minutes, stirring frequently, until the jam reaches the desired consistency.
- Test the jam by placing a spoonful on a cold plate; if it holds its shape, it’s ready to jar.
- Pour the hot jam into sterilized jars, seal tightly, and let cool to room temperature before storing.
