Ingredients

- 5 oz arugula
- 2 ripe nectarines pitted and thinly sliced or chopped
- 1/2 cup walnuts roughly chopped
- 1/2 cup feta cheese crumbled
- 1/4 cup fresh basil leaves
- 6 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 3 teaspoons honey
- 1/4 teaspoon salt and freshly cracked black pepper
Instructions
- In a large bowl, combine the arugula, nectarines, walnuts, and feta cheese.
- In a small blender, add the basil leaves, extra virgin olive oil, balsamic vinegar, honey, salt, and black pepper. Blend until smooth.
- Drizzle the basil vinaigrette over the salad and toss gently to combine.
