Description

Ingredients

  • 2 ripe nectarines pitted and thinly sliced or chopped
  • 1/2 cup walnuts roughly chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh basil leaves
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 3 teaspoons honey
  • 1/4 teaspoon salt and freshly cracked black pepper

Instructions

  1. In a large bowl, combine the arugula, nectarines, walnuts, and feta cheese.
  2. In a small blender, add the basil leaves, extra virgin olive oil, balsamic vinegar, honey, salt, and black pepper. Blend until smooth.
