  • 5 ounces mixed salad greens or arugula
  • 1 Asian pear
  • Juice of half a lemon
  • 1/2 cup pomegranate arils
  • 1/2 cup crumbled feta or goat cheese (optional
  • may use a dairy free feta as a substitute)
  • 1 tablespoon minced shallot
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 2 teaspoons Dijon mustard
  • 1 teaspoon whole grain mustard
  • 1/4 cup olive oil
  • 1/2 teaspoon kosher salt
  • plus more to taste if desired
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C). Spread the walnuts on a baking sheet and toast them in the oven for about 8-10 minutes, or until fragrant and golden brown. Remove and let cool.
  2. In a large bowl, combine the mixed salad greens or arugula, sliced Asian pear, lemon juice, pomegranate arils, and the toasted walnuts.
  3. In a separate bowl, whisk together the minced shallot, apple cider vinegar, maple syrup, Dijon mustard, whole grain mustard, olive oil, kosher salt, and black pepper until well combined to create the dressing.
  4. Drizzle the maple mustard dressing over the salad and toss gently to combine. If using, sprinkle crumbled feta or goat cheese on top before serving.

Notes

You can adjust the sweetness of the dressing by adding more or less maple syrup according to your taste.
