- 5 large eggs
- 1 1/4 cup packed brown sugar
- 1/4 cup honey
- 1 teaspoon quality pure vanilla extract
- 2 cups almond flour
- 2 cups hazelnut flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 3 teaspoons Lebkuchengewürz
- 4 ounces candied lemon peel
- 4 ounces candied orange peel
- 1/4 cup all-purpose flour
- Backoblaten
- Blanched whole almonds
- 3 ounces quality dark or milk chocolate
- 2 teaspoons coconut oil
- 1 cup sifted powdered sugar
- 3 tablespoons water or milk
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with Backoblaten or communion wafers.
- In a large bowl, beat the eggs with brown sugar, honey, and vanilla extract until well combined.
- In another bowl, mix the almond flour, hazelnut flour, salt, baking powder, and Lebkuchengewürz.
- Gradually add the dry ingredients to the egg mixture, stirring until the dough is well blended.
- Toss the candied lemon and orange peel with the all-purpose flour to coat, then fold them into the dough.
- Spoon the dough onto the prepared Backoblaten, leaving some space in between each cookie.
- Top each cookie with a halved almond, then bake for 25-30 minutes or until lightly browned.
- While the cookies are baking, prepare the chocolate glaze by melting the chocolate and coconut oil together in the microwave.
- For the sugar glaze, mix the powdered sugar with water or milk until smooth.
- Once the cookies are cooled, drizzle with the chocolate glaze and finish with a layer of sugar glaze if desired.
Notes
For a richer flavor, use homemade Lebkuchengewürz and candied peel instead of store-bought. Adjust the glaze consistency according to your preference.
