- skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 cloves garlic minced
- 1 cup apple cider
- ½ cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- ½ teaspoon cinnamon
- 4 small sweet potatoes peeled and cubed
- 1 large apple cored and sliced
- ½ cup pecans chopped
- fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- In a skillet over medium heat, heat olive oil and melt butter. Add minced garlic and sauté until fragrant.
- Pour in the apple cider and chicken broth, then stir in Dijon mustard, dried thyme, and cinnamon.
- Add the seasoned chicken breasts to the skillet and simmer for about 5 minutes.
- In a baking dish, arrange the cubed sweet potatoes and apple slices. Place the chicken on top.
- Pour the sauce over the chicken and veggies, then cover the dish with foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and sprinkle pecans on top, then bake for an additional 5 minutes.
- Garnish with fresh parsley and serve warm.
Notes
For extra flavor, you can marinate the chicken in the sauce for a couple of hours before cooking.
