Ingredients

  • skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 cup apple cider
  • ½ cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon cinnamon
  • 4 small sweet potatoes peeled and cubed
  • 1 large apple cored and sliced
  • ½ cup pecans chopped
  • fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet over medium heat, heat olive oil and melt butter. Add minced garlic and sauté until fragrant.
  4. Pour in the apple cider and chicken broth, then stir in Dijon mustard, dried thyme, and cinnamon.
  5. Add the seasoned chicken breasts to the skillet and simmer for about 5 minutes.
  6. In a baking dish, arrange the cubed sweet potatoes and apple slices. Place the chicken on top.
  7. Pour the sauce over the chicken and veggies, then cover the dish with foil.
  8. Bake in the preheated oven for 25 minutes. Remove the foil and sprinkle pecans on top, then bake for an additional 5 minutes.
  9. Garnish with fresh parsley and serve warm.

Notes

For extra flavor, you can marinate the chicken in the sauce for a couple of hours before cooking.
