  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups romaine lettuce
  • roughly chopped
  • 1 medium apple
  • cored and chopped
  • ½ cup pecans
  • ½ cup dried cranberries
  • ⅓ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix garlic powder, onion powder, salt, black pepper, and olive oil.
  3. Rub the spice mixture over the chicken breasts and place them on a baking sheet.
  4. Bake for 25-30 minutes or until the chicken is cooked through.
  5. While the chicken is baking, prepare the dressing by whisking together extra-virgin olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and black pepper in a small bowl.
  6. Once the chicken is done, let it rest for a few minutes, then chop it into bite-sized pieces.
  7. In a large bowl, combine the chopped romaine, apple, pecans, dried cranberries, feta cheese, and the chicken.
