- ½ teaspoon onion powder

- ½ teaspoon black pepper
- 1 tablespoon olive oil
- ¼ cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons maple syrup
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 cups romaine lettuce
- roughly chopped
- 1 medium apple
- cored and chopped
- ½ cup pecans
- ½ cup dried cranberries
- ⅓ cup crumbled feta cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix garlic powder, onion powder, salt, black pepper, and olive oil.
- Rub the spice mixture over the chicken breasts and place them on a baking sheet.
- Bake for 25-30 minutes or until the chicken is cooked through.
- While the chicken is baking, prepare the dressing by whisking together extra-virgin olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and black pepper in a small bowl.
- Once the chicken is done, let it rest for a few minutes, then chop it into bite-sized pieces.
- In a large bowl, combine the chopped romaine, apple, pecans, dried cranberries, feta cheese, and the chicken.
- Drizzle the dressing over the salad, toss gently to combine, and serve.
