Baba Ghanoush is a flavorful Middle Eastern dip made from roasted eggplants, combined with garlic, olive oil, and spices, perfect for spreading or dipping.
Ingredients

- 2 medium eggplants sliced into 1/2 inch rounds
- 2 tablespoons olive oil for brushing and glazing
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 3 cloves garlic minced

Instructions
- Preheat your oven to 400°F (200°C).
- Place the sliced eggplants on a baking sheet and brush them lightly with olive oil.
- Sprinkle smoked paprika, dried thyme, minced garlic, salt, and black pepper over the eggplant slices.
- Roast the eggplants for about 30 minutes, or until they are tender and lightly browned.
- Remove from the oven and let cool slightly, then scrape the flesh from the skin into a bowl.
- Mash the eggplant flesh with a fork and mix until smooth, adjusting seasoning to taste if needed.
- Serve at room temperature with pita bread or fresh veggies.
Notes
For a creamier texture, you can blend the eggplant mixture in a food processor. Adjust the spices according to your preference.
