Description

Baba Ghanoush is a flavorful Middle Eastern dip made from roasted eggplants, combined with garlic, olive oil, and spices, perfect for spreading or dipping.


Ingredients

  • 2 medium eggplants sliced into 1/2 inch rounds
  • 2 tablespoons olive oil for brushing and glazing
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 3 cloves garlic minced
  • to taste salt and black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the sliced eggplants on a baking sheet and brush them lightly with olive oil.
  3. Sprinkle smoked paprika, dried thyme, minced garlic, salt, and black pepper over the eggplant slices.
  4. Roast the eggplants for about 30 minutes, or until they are tender and lightly browned.
  5. Remove from the oven and let cool slightly, then scrape the flesh from the skin into a bowl.
  6. Mash the eggplant flesh with a fork and mix until smooth, adjusting seasoning to taste if needed.
  7. Serve at room temperature with pita bread or fresh veggies.

Notes

For a creamier texture, you can blend the eggplant mixture in a food processor. Adjust the spices according to your preference.
