- ½ cup old-fashioned oats
- ⅓ cup dark or light brown sugar
- ¼ cup unsweetened shredded coconut
- 1 teaspoon ground cinnamon
- ⅛ teaspoon kosher salt
- 3 tablespoons unsalted butter
- 1 cup apple cider
- 1 cinnamon stick
Instructions
- Preheat the oven to 350°F (175°C).
- Core the apples and create a hollow space in the center.
- In a bowl, mix together the oats, brown sugar, shredded coconut, ground cinnamon, and kosher salt.
- Add the dark rum to the dry mixture and stir until well combined.
- Stuff each apple with the oat mixture and place them in a baking dish.
- Dot each apple with unsalted butter and pour the apple cider around the apples in the baking dish.
- Add a cinnamon stick to the apple cider.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes until the apples are tender.
- Serve warm, drizzled with the apple cider from the dish.
