Description

This Baked Balsamic Chicken Recipe combines tender chicken breasts with a tangy balsamic vinegar marinade, fresh grape tomatoes, and creamy mozzarella balls, creating a deliciously easy meal that’s perfect for weeknight dinners.


Ingredients

  • balsamic vinegar
  • honey
  • avocado oil
  • garlic
  • Italian seasoning
  • Dijon mustard
  • grape tomatoes
  • mozzarella balls
  • fresh basil
  • chicken breast
  • salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, avocado oil, minced garlic, Italian seasoning, Dijon mustard, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the marinade over them, ensuring they are well coated.
  4. Add the grape tomatoes around the chicken in the baking dish.
  5. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. During the last 5 minutes of baking, sprinkle the mozzarella balls on top of the chicken and return to the oven until melted.
  7. Remove from oven, garnish with fresh basil, and serve.

Notes

For an extra kick, consider adding red pepper flakes to the marinade. This dish pairs beautifully with a fresh green salad or over a bed of rice.
