Ingredients
- balsamic vinegar

Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together balsamic vinegar, honey, avocado oil, minced garlic, Italian seasoning, Dijon mustard, salt, and pepper.
- Place the chicken breasts in a baking dish and pour the marinade over them, ensuring they are well coated.
- Add the grape tomatoes around the chicken in the baking dish.
- Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- During the last 5 minutes of baking, sprinkle the mozzarella balls on top of the chicken and return to the oven until melted.
- Remove from oven, garnish with fresh basil, and serve.
Notes
For an extra kick, consider adding red pepper flakes to the marinade. This dish pairs beautifully with a fresh green salad or over a bed of rice.
