- 2 Tbsp. honey
- 2 Tbsp. oil

- 2 garlic cloves

- 1 tsp. Italian seasoning
- 1 Tbsp. Dijon mustard
- 8 oz. grape tomatoes
- halved
- 8 oz. fresh mozzarella balls
- 2 Tbsp. finely chopped fresh basil
- 2 lb. boneless
- skinless
- chicken breasts
- pounded to even thickness
- 2 Tbsp. avocado oil or other high-heat oil
- Kosher salt and fresh black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, and Dijon mustard.
- Season chicken breasts with salt and pepper, then place in a baking dish.
- Pour the balsamic mixture over the chicken, ensuring it’s well-coated.
- Bake for 25 minutes, then add the halved grape tomatoes and fresh mozzarella on top.
- Return to the oven and bake for an additional 5-10 minutes, or until the chicken is cooked through and the cheese is melted.
- Sprinkle with chopped fresh basil before serving.
Notes
Make sure to pound the chicken to an even thickness for even cooking. Serve with a side salad for a complete meal.
