Description
Crispy, golden-brown baked chicken schnitzel made with thin chicken breasts, seasoned flour, egg wash, and crunchy panko breadcrumbs. Baking at high heat creates a deliciously crisp coating with less oil than traditional frying.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1½ cups panko breadcrumbs
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup grated Parmesan cheese, optional
- Olive oil or cooking spray, for coating
- Lemon wedges, for serving
Instructions
- Preheat the oven to 400°F (200°C). Place a baking rack over a baking sheet and lightly grease the rack.
- Place each chicken breast between sheets of plastic wrap or parchment paper. Pound with a meat mallet until about ¼ inch thick.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with paprika, garlic powder, salt, pepper, and Parmesan if using.
- Coat each chicken breast first in flour, shaking off the excess. Dip it into the beaten eggs, then press it firmly into the breadcrumb mixture to coat both sides.
- Arrange the breaded chicken pieces on the prepared baking rack, leaving space between them.
- Lightly spray or drizzle the schnitzels with olive oil.
- Bake for 20–25 minutes, flipping halfway through if not using a rack, until golden brown and the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the schnitzel rest for a few minutes.
- Serve hot with fresh lemon wedges and your favorite side dishes.
Notes
- Pound the chicken evenly so it cooks quickly and consistently.
- Panko breadcrumbs provide a crispier coating than regular breadcrumbs.
- A baking rack allows hot air to circulate underneath the chicken for better crispiness.
- Lightly coating the breading with oil helps it turn golden brown in the oven.
- Do not overcrowd the baking sheet.
- Serve with mashed potatoes, roasted vegetables, coleslaw, salad, or cauliflower mash.
- To freeze, cool completely, place in a freezer-safe container or bag, and reheat in a 350°F oven until hot and crisp.
