Description

Ingredients

  • pounds haddock (2 filets)
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp Old Bay seasoning (optional)
  • 2 tbsp butter
  • ½ cup red bell pepper chopped
  • ½ cup onion chopped
  • 1 cup mushrooms sliced
  • 10 oz can condensed cream of mushroom soup (284mL)
  • 1 cup milk
  • 2 tbsp capers (optional)
  • 1 cup grated cheddar cheese
  • ½ cup breadcrumbs
  • 1 tbsp melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt 2 tablespoons of butter over medium heat and sauté the red bell pepper, onion, and mushrooms until softened.
  3. In a mixing bowl, combine the cream of mushroom soup, milk, sautéed vegetables, capers, salt, pepper, and Old Bay seasoning, if using.
  4. Place the haddock fillets in a baking dish and pour the sauce mixture over the fish.
  5. Sprinkle grated cheddar cheese over the top followed by a mixture of breadcrumbs and melted butter.
  6. Bake in the preheated oven for 25-30 minutes until the fish is cooked through and the topping is golden brown.

Notes

Feel free to substitute the haddock with other white fish like cod or pollock. The dish can be prepared ahead of time and baked just before serving.
