Delightfully baked lemon blueberry donuts that are fluffy, fruity, and topped with a tangy lemon glaze. Perfect for breakfast or a sweet snack!

- ¾ cup granulated sugar
- ¼ cup unsalted butter melted
- ¼ cup oil
- 1 cup buttermilk
- 2 large eggs room temperature
- 2 teaspoons vanilla extract
- 2 teaspoons lemon zest
- 2⅔ cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¼ teaspoon baking soda
- 1 cup fresh blueberries
- 2 cups powdered sugar
- 7–8 tablespoons freshly squeezed lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, mix together the granulated sugar, melted butter, and oil until well combined.
- Add the buttermilk, eggs, vanilla extract, and lemon zest to the mixture and whisk until smooth.
- In another bowl, whisk together the flour, baking powder, salt, and baking soda.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Gently fold in the fresh blueberries.
- Fill each donut cavity about 2/3 full with the batter.
- Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack.
- For the glaze, combine powdered sugar with lemon juice until smooth. Drizzle over cooled donuts.
Notes
Feel free to adjust the amount of lemon juice in the glaze to achieve your desired tanginess.
