Description

This Baked Mediterranean Salmon Recipe features tender salmon fillets marinated in a zesty mix of olive oil, lemon, garlic, and fresh dill, baked alongside vibrant cherry tomatoes, artichoke hearts, and kalamata olives for a flavorful and healthy meal.


Ingredients

  • 2 tablespoon extra virgin olive oil
  • Juice of 1 lemon
  • 2 garlic cloves

  • 23 tablespoon fresh dill
  • chopped
  • 400 g cherry tomatoes
  • washed and halved
  • 1 can 400 g artichoke hearts
  • drained and quartered
  • 1 red onion
  • finely diced
  • ½ cup kalamata olives
  • pitted
  • 2 tablespoons capers
  • rinsed
  • 4 salmon fillets
  • about 125 g each
  • Salt and freshly ground black pepper
  • to taste
  • ¼ cup flat-leaf parsley
  • washed and chopped
  • Lemon wedges

Instructions

  1. In a bowl, mix the olive oil, lemon juice, minced garlic, and chopped dill to create the marinade.
  2. Add the salmon fillets to the marinade and let them soak for at least 15 minutes.
  3. Preheat the oven to 200°C (400°F).
  4. Spread the cherry tomatoes, artichoke hearts, red onion, kalamata olives, and capers on a baking sheet.
  5. Place the marinated salmon fillets on top of the vegetables, then season with salt and pepper.
  6. Bake for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.
  7. Garnish with chopped parsley and serve with lemon wedges.

Notes

For added flavor, consider letting the marinade sit for longer. Pair with a side salad or whole grain for a complete meal.
