- 2 tablespoon extra virgin olive oil
- Juice of 1 lemon
- 2 garlic cloves

- 2–3 tablespoon fresh dill
- chopped
- 400 g cherry tomatoes
- washed and halved
- 1 can 400 g artichoke hearts
- drained and quartered
- 1 red onion
- finely diced
- ½ cup kalamata olives
- pitted
- 2 tablespoons capers
- rinsed
- 4 salmon fillets
- about 125 g each
- Salt and freshly ground black pepper
- to taste
- ¼ cup flat-leaf parsley
- washed and chopped
- Lemon wedges
Instructions
- In a bowl, mix the olive oil, lemon juice, minced garlic, and chopped dill to create the marinade.
- Add the salmon fillets to the marinade and let them soak for at least 15 minutes.
- Preheat the oven to 200°C (400°F).
- Spread the cherry tomatoes, artichoke hearts, red onion, kalamata olives, and capers on a baking sheet.
- Place the marinated salmon fillets on top of the vegetables, then season with salt and pepper.
- Bake for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.
- Garnish with chopped parsley and serve with lemon wedges.
Notes
For added flavor, consider letting the marinade sit for longer. Pair with a side salad or whole grain for a complete meal.
