Description

Deliciously moist Banana Crumb Muffins topped with a crunchy brown sugar crumb for the perfect breakfast treat or snack.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 bananas
  • mashed
  • ¾ cup white sugar
  • ⅓ cup butter
  • melted
  • 1 egg
  • lightly beaten
  • ⅓ cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • ⅛ teaspoon ground cinnamon
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, baking soda, baking powder, and salt.
  3. In another bowl, mix the mashed bananas, white sugar, melted butter, and egg until well combined.
  4. Pour the banana mixture into the dry ingredients and stir until just combined.
  5. In a small bowl, prepare the crumb topping by mixing together the brown sugar, flour, cinnamon, and butter until it resembles crumbs.
  6. Scoop the muffin batter into the prepared muffin tin, filling each cup about 3/4 full, and sprinkle the crumb topping over each muffin.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Feel free to add nuts or chocolate chips for extra flavor. These muffins can be stored in an airtight container for up to 3 days.
