Description

Deliciously moist Banana Oat Muffins are the perfect breakfast treat, packed with the wholesome goodness of bananas and oats.


Ingredients

  • 1 ½ cups unbleached all-purpose flour
  • 1 cup rolled oats
  • ½ cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • ¾ cup milk
  • ⅓ cup vegetable oil
  • ½ teaspoon vanilla extract
  • 1 cup mashed bananas

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, oats, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.
  4. Stir in the mashed bananas into the wet mixture.
  5. Combine the wet and dry ingredients, stirring just until moistened.
  6. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow muffins to cool in the tin for a few minutes before transferring them to a wire rack.
