Instructions

  1. Pat the sirloin tip steaks dry with paper towels.
  2. In a bowl, whisk together the olive oil, balsamic vinegar, minced garlic, rosemary, salt, and black pepper.
  3. Place the steaks in a resealable bag or shallow dish and pour the marinade over them. Coat well.
  4. Cover and refrigerate for at least 30 minutes, preferably 2–4 hours.
  5. Remove the steaks from the refrigerator about 20 minutes before cooking. Discard the marinade and pat the steaks dry.
  6. Heat a cast-iron skillet over medium-high heat. Add the avocado oil.
  7. Place the steaks in the hot skillet and sear for about 3–4 minutes per side.
  8. Reduce the heat to medium. Add the butter, optional crushed garlic, and thyme. Baste the steaks with the melted butter for 1–2 minutes, cooking until the desired doneness is reached.
  9. For medium-rare, remove the steaks at about 130°F (54°C), allowing for carryover cooking during resting.
  10. Transfer the steaks to a plate and let them rest for 5–10 minutes.
  11. Slice thinly against the grain and serve with your favorite vegetables, mashed potatoes, rice, or salad.
