- 300 grams water (about 1 1/4 cup)
- 100 grams starter (about 1/2 cup)
- 400 grams bread flour (3 cups)
- 12 grams sea salt (2 teaspoons)
- bread flour or brown rice flour for dusting
Instructions
- In a large bowl, combine water and starter, mixing well.
- Add the bread flour and sea salt, stirring until a rough dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl and cover with a damp cloth. Let it rise for 4-6 hours, or until doubled in size.
- Preheat the oven to 450°F (230°C) and place a Dutch oven inside to heat.
- Shape the dough into a round loaf and place it on a piece of parchment paper. Dust the top lightly with flour.
- Carefully remove the preheated Dutch oven and place the parchment with the dough inside. Cover with the lid.
- Bake for 30 minutes covered, then uncover and bake for an additional 15 minutes until golden brown.
- Remove from the oven and let cool on a wire rack before slicing.
Notes
Make sure your starter is active and bubbly for best results. Adjust baking time for larger or smaller loaves.
