  • 1 1/2 teaspoons lemon zest

  • 5 tablespoons unsalted butter
  • melted and cooled to room temp
  • 1 1/2 teaspoons pure vanilla extract
  • 1 cup raspberry jam
  • or jam/filling of choice
  • granulated sugar
  • about 1 cup
  • pinch of cinnamon
  • powdered sugar
  • about 1/2 cup
  • oil for frying
  • choose a neutral tasting oil with a high smoke point like avocado or canola

Instructions

  1. In a large bowl, combine the flour, sugar, instant yeast, lemon zest, and kosher salt.
  2. Warm the milk slightly and whisk it together with eggs, egg yolk, melted butter, and vanilla extract. Slowly add this to the dry ingredients.
  3. Knead the dough until it becomes smooth and elastic, adding more milk if necessary.
  4. Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
  5. Once risen, punch down the dough and roll it out to about 1/2 inch thick. Cut out circles using a cookie cutter.
  6. Place a spoonful of jam in the center of half the circles, then top with the remaining circles and seal the edges.
  7. Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the donuts until golden brown, about 3-4 minutes per side.
  8. Remove from oil, drain on paper towels, and roll in granulated sugar mixed with a pinch of cinnamon.
  9. Dust with powdered sugar before serving. Enjoy your Berliner!
