Ingredients

  • 4 large eggs separated

  • 4 egg yolks
  • 3 tbsp cornstarch
  • ½ cup heavy cream
  • 4 oz semi-sweet chocolate chips
  • 1 tbsp light corn syrup
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, beat the egg whites until stiff peaks form. In another bowl, whisk together the egg yolks, ½ cup of sugar, melted butter, and 1 tsp of vanilla.
  3. Gently fold the egg whites into the yolk mixture.
  4. In a separate bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the egg mixture.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool.
  6. For the custard, in a saucepan, whisk together the milk, egg yolks, cornstarch, ¼ cup sugar, and cook over medium heat, stirring until thickened.
  7. Remove from heat and add ½ tsp vanilla. Let it cool before spreading it on the cake.
  8. For the ganache, heat the heavy cream until just boiling, then pour over chocolate chips and corn syrup, stirring until melted and smooth.
  9. Assemble the cake by slicing it in half horizontally. Spread custard on the bottom layer, top with the second layer, and drizzle ganache over the top.
  10. Chill before serving for the best flavor.
