- 1 (6-ounce) store bought graham cracker pie crust
- 1 (3.4-ounce) package cheesecake instant pudding mix
- 1 ½ cups milk
- 1 (8-ounce) package cream cheese softened
- ½ cup dark brown or light brown sugar
- 2 teaspoons vanilla extract
- 1 8-ounce container Cool Whip divided
- 1 ⅓ cups toasted and cooled chopped pecans divided
- Garnish: 8 whole pecans optional
Instructions
- In a medium bowl, whisk together the instant pudding mix and milk until well combined and thickened.
- In another bowl, beat the softened cream cheese, brown sugar, and vanilla extract until smooth and creamy.
- Fold in half of the Cool Whip and half of the toasted pecans into the cream cheese mixture.
- Gently fold the pudding mixture into the cream cheese mixture until fully combined.
- Pour the filling into the graham cracker crust and smooth the top.
- Top with remaining Cool Whip and sprinkle with the remaining chopped pecans.
- Chill in the refrigerator for at least 2 hours before serving. Garnish with whole pecans if desired.
