Ingredients

  • 2 cups grated zucchini (about 2 small)
  • ¾ cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups chopped walnuts (or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the grated zucchini, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the walnuts or pecans.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes then transfer to a wire rack to cool completely.

Notes
