- 2 cups grated zucchini (about 2 small)
- ¾ cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 ½ cups chopped walnuts (or pecans)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together the grated zucchini, vegetable oil, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the walnuts or pecans.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes then transfer to a wire rack to cool completely.
Notes
Make sure to squeeze excess moisture from the grated zucchini for a better texture. You can store leftovers in an airtight container at room temperature for up to 3 days.
