- 1 (15.25 oz) box vanilla cake mix
- 1 cup mashed overripe banana
- 1 cup unsweetened applesauce
- 1 cup rainbow sprinkles
- plus more for the muffin tops
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with liners.
- In a large bowl, combine the dry vanilla cake mix, mashed banana, and applesauce, mixing until just combined.
- Fold in the rainbow sprinkles.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle additional sprinkles on top.
- Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra moisture, use very ripe bananas. These muffins can be stored in an airtight container for up to 3 days.
