Ingredients

  • 1 cup mashed overripe banana
  • 1 cup unsweetened applesauce
  • 1 cup rainbow sprinkles
  • plus more for the muffin tops

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with liners.
  2. In a large bowl, combine the dry vanilla cake mix, mashed banana, and applesauce, mixing until just combined.
  3. Fold in the rainbow sprinkles.
  4. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle additional sprinkles on top.
  5. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
