Delicious and nutritious Blueberry Baked Oatmeal, perfect for a hearty breakfast that can be made ahead of time.

- 2 cups old fashioned oats
- ¾ cup milk
- 1 cup unsweetened applesauce
- ¼ cup chopped walnuts OR pecans OR sliced almonds
- 2 large eggs
- ¼ cup maple syrup OR brown sugar
- 2 teaspoons pure vanilla extract
- 1 ½ teaspoons cinnamon
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 cups blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the oats, milk, applesauce, chopped nuts, eggs, maple syrup or brown sugar, vanilla extract, cinnamon, baking powder, and salt. Mix well.
- Gently fold in the blueberries until evenly distributed.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until set and golden on top.
- Allow to cool slightly before slicing and serving.
Notes
For a vegan option, substitute the eggs with flax eggs (1 tbsp ground flaxseed mixed with 3 tbsp water per egg). Feel free to use any type of milk you prefer.
