Description

Delicious and nutritious Blueberry Baked Oatmeal, perfect for a hearty breakfast that can be made ahead of time.


Ingredients

  • 2 cups old fashioned oats
  • ¾ cup milk
  • 1 cup unsweetened applesauce
  • ¼ cup chopped walnuts OR pecans OR sliced almonds
  • 2 large eggs
  • ¼ cup maple syrup OR brown sugar
  • 2 teaspoons pure vanilla extract
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the oats, milk, applesauce, chopped nuts, eggs, maple syrup or brown sugar, vanilla extract, cinnamon, baking powder, and salt. Mix well.
  3. Gently fold in the blueberries until evenly distributed.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until set and golden on top.
  6. Allow to cool slightly before slicing and serving.

Notes

For a vegan option, substitute the eggs with flax eggs (1 tbsp ground flaxseed mixed with 3 tbsp water per egg). Feel free to use any type of milk you prefer.
