- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup mashed bananas (2–3 bananas)
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup honey (or maple syrup)
- 2/3 cup almond milk (or milk of your choice)
- 1 and 1/2 cups of blueberries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, combine oats, baking powder, salt, and cinnamon.
- In another bowl, mix mashed bananas, egg, vanilla, honey, and almond milk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until fully incorporated.
- Gently fold in the blueberries.
- Evenly distribute the mixture into the greased muffin tin.
- Bake for 25-30 minutes or until the tops are golden and a toothpick comes out clean.
- Allow to cool for a few minutes before removing from the tin.
Notes
These oatmeal cups can be stored in the refrigerator for up to a week and are suitable for freezing. You can reheat them in the microwave or the oven for a quick breakfast.
