Description

Deliciously soft and chewy blueberry cookies, bursting with fresh blueberry flavor and a hint of lemon.


Ingredients

  • Unsalted Butter
  • Granulated White Sugar
  • Egg
  • Vanilla Extract
  • Lemon Juice
  • Fresh Blueberries
  • Flour
  • Baking Powder
  • Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened unsalted butter and granulated white sugar until light and fluffy.
  3. Add the egg, vanilla extract, and lemon juice, and mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Gently fold in the fresh blueberries to the dough.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 15-20 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Make sure to use room temperature ingredients for the best texture. You can also adjust the sweetness by adding more or less sugar.
