- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup unsalted butter

- ¼ teaspoon salt
- 8 ounces cream cheese
- softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups fresh blueberries
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a mixing bowl, combine the flour, sugar, melted butter, and salt. Press the mixture into the bottom of the prepared baking pan to form the crust.
- In another bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and eggs until smooth. Pour this mixture over the crust in the baking pan.
- In a small bowl, toss the blueberries with cornstarch, lemon juice, and granulated sugar. Gently spread the blueberry mixture over the cream cheese filling.
- Bake in the preheated oven for 30 minutes or until the center is set and lightly golden.
- Allow to cool before slicing into bars. Serve chilled or at room temperature.
