  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter

  • 8 ounces cream cheese
  • softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups fresh blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine the flour, sugar, melted butter, and salt. Press the mixture into the bottom of the prepared baking pan to form the crust.
  3. In another bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and eggs until smooth. Pour this mixture over the crust in the baking pan.
  4. In a small bowl, toss the blueberries with cornstarch, lemon juice, and granulated sugar. Gently spread the blueberry mixture over the cream cheese filling.
  5. Bake in the preheated oven for 30 minutes or until the center is set and lightly golden.
  6. Allow to cool before slicing into bars. Serve chilled or at room temperature.
